Honey Gingerbread cookies

Hi all,

I haven’t baked in a long time but I had some spare time up my sleeve and made these honey gingerbread cookies.

Gingerbread cookies

What you will need:
2/3 cup of brown sugar
100g of butter (unsalted)
1 egg
3 and half cups plain flour
3 teaspoons of ground ginger
2 teaspoons of baking powder
2/3 cup of honey (golden syrup as alternative)

Method:
1. Cream sugar and butter
2. Add egg
3. Add all dry ingredients together and add to the wet mixture
4. Add the honey
5. Make into a dough wrap in cling wrap and chill in the fridge for half an hour
6. Roll out dough to 5 mm thick and cut shapes
7. Bake in 160 degree oven for about 10 minutes depending on oven.

For the icing:

1 egg white and 1 cup of icing sugar – beat the egg white to soft peaks and then add the icing sugar.

We went crazy with the icing as you can see 🙂
