Spanakopita

Hi all,

Decided to do some baking! Today we are baking spanakopita – these are filo pastries filled with spinach, ricotta and feta. Very easy to make and so very delicious.

Feta cheese – we used danish feta cheese but you can also use Greek feta

One egg

Melted butter for brushing in between the layers of pastry

Method:

Defrost the spinach – they come in cubes so just put in some water and microwave

Add the ricotta ( around 250g) the spinach (200g) danish feta – 100g and one egg and mix in a bowl

It will look like this

Defrost the filo pastry *take note* that filo pastry is quite delicate and fragile so you will need to be careful when separating layers and it also can dry easily so when not using, place a damp cloth on top to keep it semi-moist.

Brush with the melted butter and layer 3 layers on top of each other.

Depending on how big or small you want your spanakopitas – cut the pastry into 2 or 3 horizontally.

Place mixture in and then fold like triangles. Brush with egg or butter and then bake.

Bake for 10-12 minutes depending on your oven for 180 degrees and tada!!!

These are so good and really fast to make 🙂 The recipe makes about 24 🙂 (which are nearly all gone by the way)

  1. OK, I must be the stupidest person in the world – I had no idea there was such a thing as frozen phyllo dough! I could have been making baklava all this time! OK, I could have been aspiring to make baklava this whole time …
