Dark chocolate cookies

Hi all,

On the weekend I did some more baking! Probably needed a sugar kick/lift ๐Ÿ™‚ So I made these dark chocolate cookies but shaped them into gingerbread shapes and then iced them ๐Ÿ™‚

What you will need:
2 cups of plain flour
4 Tablespoons of cocoa powder
1/2 tsp of baking soda
1/2 tsp salt
1 cup unsalted butter – melted (I used margarine)
1 cup packed brown sugar
1/2 cup white sugar
1 TBsp of vanilla essence/extract
1 egg
1 egg yolk

Method:
1. Preheat oven to 325 degrees F or 165 degrees C. Sift the flour, baking soda, cocoa powder and salt together.


2. In another bowl, combine the butter, sugar – white and brown and mix well. Add the vanilla essence and egg and egg yolk

3. Combine the wet mixture with the dry mixture and voila cookie dough ๐Ÿ™‚

So this is optional – if you love your chocolate you can add choc chips into the mix or any other berries – cranberries, sultanas etc

I left it plain and started shaping my dough into gingerbread and other shapes.

Put in the oven for about 13 minutes – check at about 10 just in case your oven heats up quickly.

Let it cool on a wire rack and then you can ice them or decorate them ๐Ÿ™‚
Delish! They taste great with a glass of milk! ๐Ÿ™‚
